Description

A heartwarming bowl of 15-Bean with Smoked Turkey that combines smoky turkey and a medley of beans, perfect for family gatherings or cozy nights in.


Ingredients

  • 1 (20 oz) bag 15-bean soup mix, rinsed and sorted
  • 1.5 lbs smoked turkey wings or legs
  • 1 large onion, diced
  • 3 medium carrots, peeled and sliced
  • 3 celery stalks, sliced
  • 4 cloves garlic, minced
  • 1 (14.5 oz) can diced tomatoes, undrained
  • 8 cups low-sodium chicken broth
  • 2 cups water
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried oregano
  • 1 bay leaf
  • 1/2 teaspoon salt (or to taste)
  • 1/4 teaspoon crushed red pepper flakes (optional)

Instructions

  1. Rinse and sort the 15-bean soup mix, discarding any debris and stones.
  2. In a slow cooker, place the prepared beans, smoked turkey, diced onion, sliced carrots, sliced celery, minced garlic, and undrained canned tomatoes.
  3. Pour the chicken broth and water over the ingredients. Add thyme, paprika, black pepper, oregano, bay leaf, salt, and crushed red pepper flakes (if using). Stir gently to combine.
  4. Cover the slow cooker and cook on the LOW setting for 8 hours.
  5. Once the cooking time is up, remove the smoked turkey pieces from the soup, discarding skin and bones. Shred the meat and return it to the pot.
  6. Taste the soup and adjust seasonings as needed, removing the bay leaf before serving.

Notes

For enhanced flavor, sauté onions and garlic before adding to the slow cooker. This dish can also be made in an Instant Pot or on the stovetop.
