A delicious take on classic comfort food, this grilled cheese is packed with crispy bacon, sweet caramelized onions, and layers of melty cheese.
Ingredients

- 8 slices of bread (sourdough, ciabatta, or white)
- 4 slices of thick-cut bacon (or turkey bacon)
- 1 large onion, sliced
- 4 slices of cheese (cheddar and Gouda recommended)
- Butter (for spreading)
- Salt and pepper to taste
Instructions
- In a skillet over medium heat, cook the bacon until crispy, about 5-7 minutes. Remove and set aside on paper towel.
- Using bacon drippings, add sliced onions to the skillet and cook over medium heat for about 15 minutes, stirring occasionally until golden brown.
- Butter one side of each slice of bread.
- On the unbuttered side of half the slices, layer cheese, bacon, and caramelized onions, then top with another slice of cheese and remaining bread.
- Heat the skillet over medium heat again and carefully place the sandwiches in the pan.
- Cook until golden brown, about 3-4 minutes per side, until the cheese melts.
- Slice the sandwich in half and serve warm.
Notes
Customize with your favorite cheese or add jalapeños for extra heat. Serve with tomato soup or a fresh salad for a complete meal.
