Description

Indulge in the silky texture and delicate sweetness of Bavarian cream, a refined dessert perfect for any occasion.


Ingredients

Scale
  • 2 cups heavy cream
  • 1 cup milk
  • 3/4 cup granulated sugar
  • 4 large egg yolks
  • 2 tablespoons gelatine
  • 1 teaspoon vanilla extract
  • 1/4 cup cold water

Instructions

  1. Pour 1 cup of heavy cream, milk, and half of the sugar into a medium saucepan over medium heat. Stir gently and heat until it simmers.
  2. Whisk the egg yolks with the remaining sugar in a large mixing bowl until smooth and pale.
  3. Gradually whisk the hot milk mixture into the egg yolk mixture, ensuring you whisk constantly.
  4. Return the combined mixture to the saucepan, stirring over low heat until it thickens enough to coat the back of a spoon.
  5. Bloom the gelatin by sprinkling it over cold water; let it sit for about 5 minutes.
  6. Stir the bloomed gelatin into the warm custard mixture until fully dissolved.
  7. Allow the custard to cool to room temperature before gently folding in the remaining heavy cream and vanilla extract.
  8. Pour the mixture into serving dishes and refrigerate for at least four hours or until set.

Notes

Make a day in advance for the best flavor and texture. Use fresh heavy cream for optimal results.
