- 1 cup milk
- 3/4 cup granulated sugar
- 4 large egg yolks
- 2 tablespoons gelatine
- 1 teaspoon vanilla extract
- 1/4 cup cold water
Instructions
- Pour 1 cup of heavy cream, milk, and half of the sugar into a medium saucepan over medium heat. Stir gently and heat until it simmers.
- Whisk the egg yolks with the remaining sugar in a large mixing bowl until smooth and pale.
- Gradually whisk the hot milk mixture into the egg yolk mixture, ensuring you whisk constantly.
- Return the combined mixture to the saucepan, stirring over low heat until it thickens enough to coat the back of a spoon.
- Bloom the gelatin by sprinkling it over cold water; let it sit for about 5 minutes.
- Stir the bloomed gelatin into the warm custard mixture until fully dissolved.
- Allow the custard to cool to room temperature before gently folding in the remaining heavy cream and vanilla extract.
- Pour the mixture into serving dishes and refrigerate for at least four hours or until set.
