Description

A vibrant medley of pasta, juicy chicken, and fresh veggies, dressed in smoky barbecue sauce and creamy ranch, perfect for summer gatherings.


Ingredients

  • 2 cups cooked pasta (rotini, fusilli, or elbow macaroni)
  • 1 cup cooked chicken, shredded
  • 1 cup corn (fresh, cooked, or canned)
  • 1 bell pepper, diced
  • 1/2 cup red onion, diced
  • 1/2 cup barbecue sauce
  • 1/4 cup ranch dressing
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)

Instructions

  1. In a large mixing bowl, combine the cooked pasta, shredded chicken, corn, diced bell pepper, and red onion.
  2. Pour the barbecue sauce and ranch dressing over the salad mix and gently stir to coat all ingredients well.
  3. Sprinkle with salt and pepper to taste.
  4. Cover the bowl with plastic wrap or transfer the salad to an airtight container and refrigerate for at least 30 minutes.
  5. Before serving, garnish with fresh cilantro if desired.
