- 200g pasta
- 200g feta cheese
- 1 cup cherry tomatoes
- 1 zucchini, diced
- 1 bell pepper, diced
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- In a baking dish, combine cherry tomatoes, zucchini, bell pepper, and garlic.
- Place the feta cheese in the center of the vegetables and drizzle with olive oil.
- Season with salt and pepper.
- Bake for 30 minutes until the vegetables are tender and the feta is golden.
- Meanwhile, cook the pasta according to package instructions.
- Once baked, mix the feta and vegetables with the cooked pasta.
- Garnish with fresh basil before serving.
Notes
- Feel free to add any other vegetables you like.
- For a spicy kick, add red pepper flakes.
- This dish can be served warm or at room temperature.
