Description

A delicious and easy-to-make baked feta pasta dish loaded with fresh vegetables.


Ingredients

  • 200g pasta
  • 200g feta cheese
  • 1 cup cherry tomatoes
  • 1 zucchini, diced
  • 1 bell pepper, diced
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a baking dish, combine cherry tomatoes, zucchini, bell pepper, and garlic.
  3. Place the feta cheese in the center of the vegetables and drizzle with olive oil.
  4. Season with salt and pepper.
  5. Bake for 30 minutes until the vegetables are tender and the feta is golden.
  6. Meanwhile, cook the pasta according to package instructions.
  7. Once baked, mix the feta and vegetables with the cooked pasta.
  8. Garnish with fresh basil before serving.

Notes

  • Feel free to add any other vegetables you like.
  • For a spicy kick, add red pepper flakes.
