Description

Delightful chicken lettuce wraps that combine ground chicken, vibrant vegetables, and a savory sauce, all encased in crisp lettuce leaves for a fresh and healthy meal.


Ingredients

  • 1 lb ground chicken
  • 1 cup peanuts, chopped
  • 1 red bell pepper, diced
  • 1 carrot, grated
  • 1 cucumber, shredded
  • 1/4 cup green onions, chopped
  • 1 head of lettuce (like iceberg or butter lettuce)
  • 1/4 cup soy sauce
  • 2 tablespoons hoisin sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon rice vinegar
  • 1 teaspoon minced garlic
  • 1 teaspoon minced ginger

Instructions

  1. Heat the Non-Stick Skillet: Preheat your skillet over medium heat. Add the ground chicken, cooking until browned—about 5-7 minutes.
  2. Introduce the Veggies: Fold in the chopped peanuts, diced red bell pepper, grated carrot, and shredded cucumber. Sauté for about 2-3 minutes.
  3. Whisk the Sauce: In a mixing bowl, add soy sauce, hoisin sauce, sesame oil, rice vinegar, minced garlic, and minced ginger. Whisk until smooth.
  4. Combine Chicken and Sauce: Pour the sauce over the chicken-vegetable mixture. Stir thoroughly to coat all ingredients.
  5. Cool Slightly: Remove from heat and let it cool for about 5 minutes.
  6. Assemble Your Wraps: Spoon the filling into the lettuce leaves and garnish with green onions.

Notes

Can prepare the filling in advance and store it in the fridge for up to three days. Use an air fryer for a quicker option, cooking at 375°F for 10-12 minutes.
