Description

A classic Thai dish featuring stir-fried rice noodles, chicken, and a delightful mix of flavors including sweet, salty, and spicy.


Ingredients

  • 8 oz Rice Noodles
  • 2 tablespoons Vegetable Oil
  • 1 pound Chicken Breast, sliced
  • 2 Eggs, beaten
  • 1 cup Bean Sprouts
  • 1/2 cup Green Onions, chopped
  • 1/4 cup Crushed Peanuts
  • 3 tablespoons Fish Sauce
  • 2 tablespoons Soy Sauce
  • 1 tablespoon Sugar
  • 1 tablespoon Lime Juice
  • 1 teaspoon Chili Powder
  • Lime Wedges, for Serving

Instructions

  1. Soak the noodles in warm water for about 30 minutes until tender.
  2. Heat the oil in a large skillet or wok over medium-high heat until shimmering.
  3. Cook the sliced chicken breast until golden-brown and no longer pink, approximately 4-5 minutes.
  4. Scramble the eggs on one side of the pan and mix with the chicken once fully cooked.
  5. Add the drained noodles, fish sauce, soy sauce, sugar, lime juice, and chili powder. Toss for 2-3 minutes.
  6. Incorporate bean sprouts and green onions, heating through for about a minute.
  7. Plate the dish, sprinkle with crushed peanuts, and serve with lime wedges.

Notes

Customize with extra veggies or different proteins as desired. Best served hot.
