- 8 oz Rice Noodles
- 2 tablespoons Vegetable Oil
- 1 pound Chicken Breast, sliced
- 2 Eggs, beaten
- 1 cup Bean Sprouts
- 1/2 cup Green Onions, chopped
- 1/4 cup Crushed Peanuts
- 3 tablespoons Fish Sauce
- 2 tablespoons Soy Sauce
- 1 tablespoon Sugar
- 1 tablespoon Lime Juice
- 1 teaspoon Chili Powder
- Lime Wedges, for Serving
Instructions
- Soak the noodles in warm water for about 30 minutes until tender.
- Heat the oil in a large skillet or wok over medium-high heat until shimmering.
- Cook the sliced chicken breast until golden-brown and no longer pink, approximately 4-5 minutes.
- Scramble the eggs on one side of the pan and mix with the chicken once fully cooked.
- Add the drained noodles, fish sauce, soy sauce, sugar, lime juice, and chili powder. Toss for 2-3 minutes.
- Incorporate bean sprouts and green onions, heating through for about a minute.
- Plate the dish, sprinkle with crushed peanuts, and serve with lime wedges.
Notes
