- 1 lb chicken thighs, boneless and skinless
- 1 lb smoked sausage, sliced
- 1 cup onion, chopped
- 1 cup green bell pepper, chopped
- 1 cup celery, chopped
- 4 cloves garlic, minced
- 6 cups chicken broth
- 1 can (14.5 oz) diced tomatoes
- 2 tbsp Cajun seasoning
- 1 bay leaf
- Salt and pepper to taste
- 2 cups okra, sliced (optional)
- Cooked rice for serving
Instructions
- In a large pot, heat some oil over medium heat and brown the chicken thighs on all sides.
- Add the sliced sausage and cook until browned.
- Stir in the onion, bell pepper, celery, and garlic; cook until softened.
- Add the chicken broth, diced tomatoes, Cajun seasoning, bay leaf, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 30 minutes.
- If using, add the okra and simmer for an additional 10 minutes.
- Remove the bay leaf and serve the gumbo over cooked rice.
Notes
- For a spicier gumbo, add cayenne pepper to taste.
- Gumbo can be made a day in advance for better flavor.
- Feel free to add other proteins like shrimp or crab for variety.
