Description

A delicious and hearty Chicken & Sausage Gumbo recipe that combines flavorful ingredients for a comforting meal.


Ingredients

  • 1 lb chicken thighs, boneless and skinless
  • 1 lb smoked sausage, sliced
  • 1 cup onion, chopped
  • 1 cup green bell pepper, chopped
  • 1 cup celery, chopped
  • 4 cloves garlic, minced
  • 6 cups chicken broth
  • 1 can (14.5 oz) diced tomatoes
  • 2 tbsp Cajun seasoning
  • 1 bay leaf
  • Salt and pepper to taste
  • 2 cups okra, sliced (optional)
  • Cooked rice for serving

Instructions

  1. In a large pot, heat some oil over medium heat and brown the chicken thighs on all sides.
  2. Add the sliced sausage and cook until browned.
  3. Stir in the onion, bell pepper, celery, and garlic; cook until softened.
  4. Add the chicken broth, diced tomatoes, Cajun seasoning, bay leaf, salt, and pepper.
  5. Bring to a boil, then reduce heat and simmer for 30 minutes.
  6. If using, add the okra and simmer for an additional 10 minutes.
  7. Remove the bay leaf and serve the gumbo over cooked rice.

Notes

  • For a spicier gumbo, add cayenne pepper to taste.
  • Gumbo can be made a day in advance for better flavor.
  • Feel free to add other proteins like shrimp or crab for variety.
