Description

Ingredients

  • 1 lb chicken sausage
  • 2 cans (15 oz each) white beans, drained and rinsed
  • 1 cup diced tomatoes
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp dried thyme
  • 1 tsp smoked paprika
  • Salt and pepper to taste
  • 2 cups spinach
  • 1 cup shredded cheese (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, cook the chicken sausage over medium heat until browned.
  3. Add the onion and garlic, cooking until softened.
  4. Stir in the white beans, diced tomatoes, thyme, smoked paprika, salt, and pepper.
  5. Mix in the spinach until wilted.
  6. Transfer the mixture to a baking dish and top with cheese if desired.
  7. Bake for 25-30 minutes until heated through and cheese is bubbly.
