Ingredients

- 2 Large Cucumbers
- 1 Cup Fresh Lemon Juice
- 1/2 Cup Sugar (or to taste)
- 4 Cups Water
- Ice Cubes
- Mint Leaves (for garnish)
Instructions
- Peel and chop the cucumbers into manageable pieces.
- Blend the chopped cucumbers until smooth to create a vibrant green puree.
- Strain the cucumber puree through a fine mesh sieve into a bowl, pressing gently to extract juice.
- In a large pitcher, combine the cucumber juice, lemon juice, sugar, and water. Stir until the sugar dissolves.
- Chill in the refrigerator for at least one hour.
- Serve over ice and garnish with mint leaves.
