- 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
- 12 oz bowtie (farfalle) pasta
- 2 cups broccoli florets
- 1 tsp Cajun seasoning
- 1/2 tsp garlic powder
- 1/2 tsp smoked paprika
- Salt and black pepper to taste
- 1/2 tsp crushed red pepper flakes (optional)
- 1 tsp Dijon mustard
- Juice and zest of 1 lemon
- 2 tbsp fresh parsley, chopped
- 1 tbsp fresh chives, chopped
- 2 tbsp olive oil
- 6 tbsp unsalted butter
- 1/2 cup grated Parmesan cheese
- 1/2 cup reserved pasta water
Instructions
- Bring a large pot of salted water to a boil and cook the bowtie pasta according to package instructions until al dente. Reserve ½ cup of pasta water, then drain and set the pasta aside.
- Season the chicken pieces with salt, black pepper, Cajun seasoning, garlic powder, and smoked paprika.
- In a large skillet, heat the olive oil over medium-high heat. Sear the seasoned chicken for about 5-7 minutes until golden brown, then remove from the skillet and set aside.
- In the same skillet, melt the unsalted butter, then add Dijon mustard, lemon zest, and juice. Stir to combine.
- Incorporate the grated Parmesan cheese until melted, then add reserved pasta water gradually to adjust the sauce’s consistency.
- Add the cooked chicken, bowtie pasta, and broccoli to the skillet and toss together until well-coated in the sauce.
- Sprinkle fresh parsley and chives over the dish and serve immediately with extra Parmesan if desired.
