A delightful twist on traditional fried chicken, this crispy dill pickle parmesan chicken features tender chicken breasts marinated in dill pickle juice and coated with a crunchy breadcrumb and parmesan mixture.

- 4 boneless, skinless chicken breasts
- 1 cup dill pickle juice
- 1 cup seasoned breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1/2 cup all-purpose flour
- 2 large eggs, whisked
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp paprika
- Salt and pepper, to taste
- Cooking oil for frying
Instructions
- Marinate the chicken by placing it in dill pickle juice and refrigerating for 30 minutes to 2 hours.
- Set up the dredging station with flour mixed with spices in one dish, whisked eggs in the second, and breadcrumbs with Parmesan in the third.
- Prepare the chicken by drying it, dredging it in flour, dipping it in eggs, and coating it in the breadcrumb mixture.
- Heat oil in a skillet and fry each chicken breast for 5-7 minutes per side until golden brown and cooked through.
- Drain on a wire rack and let it rest before serving.
Notes
For added crunch, don’t skimp on the breadcrumb mixture. Marinating overnight enhances juiciness.
