Description

A delightful twist on traditional fried chicken, this crispy dill pickle parmesan chicken features tender chicken breasts marinated in dill pickle juice and coated with a crunchy breadcrumb and parmesan mixture.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup dill pickle juice
  • 1 cup seasoned breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup all-purpose flour
  • 2 large eggs, whisked
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp paprika
  • Salt and pepper, to taste
  • Cooking oil for frying

Instructions

  1. Marinate the chicken by placing it in dill pickle juice and refrigerating for 30 minutes to 2 hours.
  2. Set up the dredging station with flour mixed with spices in one dish, whisked eggs in the second, and breadcrumbs with Parmesan in the third.
  3. Prepare the chicken by drying it, dredging it in flour, dipping it in eggs, and coating it in the breadcrumb mixture.
  4. Heat oil in a skillet and fry each chicken breast for 5-7 minutes per side until golden brown and cooked through.
  5. Drain on a wire rack and let it rest before serving.

Notes

For added crunch, don’t skimp on the breadcrumb mixture. Marinating overnight enhances juiciness.
