Description

A comforting and creamy soup made with tender chicken, aromatic garlic, and rich Parmesan cheese, perfect for chilly evenings.


Ingredients

  • 1.5 pounds boneless, skinless chicken breasts
  • 1 cup diced onion
  • 2 cloves garlic, minced
  • 3 cups chicken broth
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1 tablespoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup tortellini (fresh or frozen)
  • 1 cup fresh spinach
  • Fresh basil for garnish

Instructions

  1. Layer the chicken at the bottom of your crock pot.
  2. Add the diced onions and minced garlic over the chicken.
  3. Pour in the chicken broth and diced tomatoes, stirring to combine.
  4. Season with Italian seasoning, salt, and pepper.
  5. Cover and cook on low for 6 hours.
  6. Shred the chicken and return it to the soup.
  7. Stir in the heavy cream and grated Parmesan.
  8. Add the tortellini and spinach and cook until heated through, about 30 minutes.
  9. Garnish with fresh basil before serving.

Notes

For a thicker soup, cook for an additional hour after adding cream and cheese. Prepare ingredients ahead of time for a seamless cooking experience.
