Description

Ingredients

  • 1 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 3/4 cup packed light brown sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon fine sea salt
  • 1 teaspoon ground cinnamon
  • 2 cups quick-cooking oats
  • 1 cup sweetened shredded coconut
  • 1 cup butterscotch chips
  • 3/4 cup chopped pecans (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a large mixing bowl, beat butter, granulated sugar, and light brown sugar together until light and fluffy, about 2-3 minutes.
  3. Add eggs one at a time, mixing well after each addition, then mix in vanilla extract.
  4. In a separate bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon.
  5. Gradually add dry mixture to the butter mixture, mixing on low speed until combined.
  6. Fold in oats, shredded coconut, butterscotch chips, and pecans.
  7. For thicker cookies, chill the dough in the refrigerator for 20-30 minutes.
  8. Scoop dough into balls (about 1 1/2 tablespoons each) and place on prepared baking sheets, leaving space between each.
  9. Bake for 10-12 minutes, until edges are set and lightly golden.
  10. Cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

Make-ahead tips: Prepare dough ahead of time and refrigerate for up to three days. You can also use different mix-ins like chocolate chips or dried fruit.
