- 1 teaspoon ground cinnamon
- 2 cups quick-cooking oats
- 1 cup sweetened shredded coconut
- 1 cup butterscotch chips
- 3/4 cup chopped pecans (optional)
Instructions
- Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a large mixing bowl, beat butter, granulated sugar, and light brown sugar together until light and fluffy, about 2-3 minutes.
- Add eggs one at a time, mixing well after each addition, then mix in vanilla extract.
- In a separate bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon.
- Gradually add dry mixture to the butter mixture, mixing on low speed until combined.
- Fold in oats, shredded coconut, butterscotch chips, and pecans.
- For thicker cookies, chill the dough in the refrigerator for 20-30 minutes.
- Scoop dough into balls (about 1 1/2 tablespoons each) and place on prepared baking sheets, leaving space between each.
- Bake for 10-12 minutes, until edges are set and lightly golden.
- Cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
