Description

A flavor-packed grilled chicken burrito with zesty chipotle ranch dressing and fresh vegetables.


Ingredients

  • Boneless, skinless chicken breasts or thighs
  • Olive oil
  • Fresh garlic, minced
  • Lime juice
  • Chipotle chili powder or adobo sauce
  • Smoked paprika
  • Ground cumin
  • Salt and black pepper
  • Ranch dressing
  • Chipotle peppers in adobo sauce
  • Garlic powder
  • Fresh chopped tomatoes
  • Diced red onion
  • Fresh cilantro leaves
  • Jalapeño slices or chopped green chili (optional)
  • Lettuce or spinach (optional)
  • Shredded cheese (cheddar, Monterey Jack, or Mexican blend)
  • Sliced avocado or a scoop of guacamole
  • Cooked rice (white, brown, or cilantro-lime rice)

Instructions

  1. In a mixing bowl, whisk together olive oil, lime juice, minced garlic, chipotle powder (or adobo sauce), smoked paprika, ground cumin, salt, and black pepper until combined.
  2. Coat the chicken thoroughly in the marinade and let it rest for at least 30 minutes or overnight in the refrigerator.
  3. Heat the grill or skillet over medium-high heat. Cook the marinated chicken for about 6-7 minutes on each side until golden and cooked through (internal temperature of 165°F).
  4. Let the chicken rest for 5 minutes before slicing it thinly.
  5. For the chipotle ranch dressing, combine ranch dressing, chipotle peppers, lime juice, garlic powder, and a pinch of salt in a blender. Blend until smooth.
  6. Warm the tortillas on a skillet or microwave. Layer with cooked rice, sliced chicken, chopped vegetables, shredded cheese, and dressing. Wrap the burrito snugly.
  7. Serve warm and enjoy!

Notes

Marinate chicken overnight for deeper flavor. Customize with additional vegetables or spice levels as desired.
