Ingredients
- Boneless, skinless chicken breasts or thighs
- Olive oil
- Fresh garlic, minced
- Lime juice
- Chipotle chili powder or adobo sauce
- Smoked paprika
- Ground cumin
- Salt and black pepper
- Ranch dressing
- Chipotle peppers in adobo sauce
- Garlic powder
- Fresh chopped tomatoes
- Diced red onion
- Fresh cilantro leaves
- Jalapeño slices or chopped green chili (optional)
- Lettuce or spinach (optional)
- Shredded cheese (cheddar, Monterey Jack, or Mexican blend)
- Sliced avocado or a scoop of guacamole
- Cooked rice (white, brown, or cilantro-lime rice)
Instructions
- In a mixing bowl, whisk together olive oil, lime juice, minced garlic, chipotle powder (or adobo sauce), smoked paprika, ground cumin, salt, and black pepper until combined.
- Coat the chicken thoroughly in the marinade and let it rest for at least 30 minutes or overnight in the refrigerator.
- Heat the grill or skillet over medium-high heat. Cook the marinated chicken for about 6-7 minutes on each side until golden and cooked through (internal temperature of 165°F).
- Let the chicken rest for 5 minutes before slicing it thinly.
- For the chipotle ranch dressing, combine ranch dressing, chipotle peppers, lime juice, garlic powder, and a pinch of salt in a blender. Blend until smooth.
- Warm the tortillas on a skillet or microwave. Layer with cooked rice, sliced chicken, chopped vegetables, shredded cheese, and dressing. Wrap the burrito snugly.
- Serve warm and enjoy!
