Description
A delicious and easy-to-make grilled cheese burrito inspired by Taco Bell’s popular menu item.
Ingredients

- 2 large flour tortillas
- 1 cup shredded cheddar cheese
- 1 cup cooked rice
- 1/2 cup black beans, drained and rinsed
- 1/2 cup cooked ground beef or shredded chicken (optional)
- 1/4 cup sour cream
- 1/4 cup taco sauce
- Butter for grilling
Instructions
- Heat a skillet over medium heat.
- Spread butter on one side of each tortilla.
- Place one tortilla, butter-side down, in the skillet.
- Layer half of the cheese, rice, black beans, meat (if using), sour cream, and taco sauce on the tortilla.
- Top with the remaining cheese and place the second tortilla on top, butter-side up.
- Cook until the bottom tortilla is golden brown, then carefully flip and cook the other side until golden and the cheese is melted.
- Remove from skillet, slice in half, and serve warm.
Notes
- Feel free to customize the filling with your favorite ingredients.
- For a spicier version, add jalapeños or hot sauce.
- Serve with additional taco sauce or salsa on the side.
