Description

A delicious and easy-to-make grilled cheese burrito inspired by Taco Bell’s popular menu item.


Ingredients

Scale
  • 2 large flour tortillas
  • 1 cup shredded cheddar cheese
  • 1 cup cooked rice
  • 1/2 cup black beans, drained and rinsed
  • 1/2 cup cooked ground beef or shredded chicken (optional)
  • 1/4 cup sour cream
  • 1/4 cup taco sauce
  • Butter for grilling

Instructions

  1. Heat a skillet over medium heat.
  2. Spread butter on one side of each tortilla.
  3. Place one tortilla, butter-side down, in the skillet.
  4. Layer half of the cheese, rice, black beans, meat (if using), sour cream, and taco sauce on the tortilla.
  5. Top with the remaining cheese and place the second tortilla on top, butter-side up.
  6. Cook until the bottom tortilla is golden brown, then carefully flip and cook the other side until golden and the cheese is melted.
  7. Remove from skillet, slice in half, and serve warm.

Notes

  • Feel free to customize the filling with your favorite ingredients.
  • For a spicier version, add jalapeños or hot sauce.
  • Serve with additional taco sauce or salsa on the side.
