- 1 lb boneless, skinless chicken breast
- 1 cup brown rice
- 1 can black beans, rinsed and drained
- 1 cup corn, frozen or canned
- 1 cup diced tomatoes
- 1 avocado, diced
- 1/2 cup Greek yogurt
- 1 tablespoon olive oil
- 1 tablespoon taco seasoning
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Cook the brown rice according to package instructions.
- In a skillet, heat olive oil over medium heat and add the chicken breast.
- Season the chicken with taco seasoning, salt, and pepper, and cook until fully cooked, about 6-7 minutes per side.
- Remove the chicken from the skillet and let it rest for a few minutes before slicing it into strips.
- In a bowl, layer the cooked rice, black beans, corn, diced tomatoes, and sliced chicken.
- Top with diced avocado and a dollop of Greek yogurt.
- Garnish with fresh cilantro and serve immediately.
