Description

Ingredients

  • 1 can black beans, rinsed and drained
  • 1 cup corn, frozen or canned
  • 1 cup diced tomatoes
  • 1 avocado, diced
  • 1/2 cup Greek yogurt
  • 1 tablespoon olive oil
  • 1 tablespoon taco seasoning
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Cook the brown rice according to package instructions.
  2. In a skillet, heat olive oil over medium heat and add the chicken breast.
  3. Season the chicken with taco seasoning, salt, and pepper, and cook until fully cooked, about 6-7 minutes per side.
  4. Remove the chicken from the skillet and let it rest for a few minutes before slicing it into strips.
  5. In a bowl, layer the cooked rice, black beans, corn, diced tomatoes, and sliced chicken.
  6. Top with diced avocado and a dollop of Greek yogurt.
  7. Garnish with fresh cilantro and serve immediately.
