- 1/4 cup olive oil
- 4 cloves garlic, minced
- 1/2 cup grated Parmesan cheese
- 1 teaspoon dried Italian herbs (oregano, basil, thyme)
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon fresh parsley, chopped (for garnish)
- Wooden or metal skewers (if using wooden skewers, soak in water for at least 30 minutes)
- Optional: pinch of red pepper flakes for a spicy kick
Instructions
- Soak Wooden Skewers: If using wooden skewers, soak them in water for at least 30 minutes.
- Prepare Marinade: In a large mixing bowl, combine olive oil, minced garlic, grated Parmesan cheese, Italian herbs, salt, and black pepper.
- Marinate the Chicken: Add chicken cubes to marinade and toss to coat. Cover the bowl and refrigerate for at least 30 minutes, up to 2 hours for maximum flavor.
- Preheat the Grill: Bring grill or grill pan to medium-high heat.
- Assemble Skewers: Thread marinated chicken onto skewers with space between each piece.
- Grill the Skewers: Grill skewers for about 10-12 minutes, turning occasionally, until chicken is golden and internal temperature reaches 165°F.
- Rest and Garnish: Allow skewers to rest for a few minutes, then sprinkle with chopped parsley before serving.
Notes
Marinate the chicken the night before for deeper flavor. Can also be cooked in an air fryer or oven.
