Description

A delicious and hearty dish combining gnocchi, spicy sausage, and roasted butternut squash for a comforting meal.


Ingredients

  • 1 pound gnocchi
  • 1 pound spicy sausage, casings removed
  • 2 cups butternut squash, diced
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon red pepper flakes (optional)
  • 1/4 cup grated Parmesan cheese
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, toss the diced butternut squash with olive oil, salt, and black pepper. Spread on a baking sheet and roast for 25-30 minutes until tender.
  3. While the squash is roasting, cook the spicy sausage in a large skillet over medium heat until browned and cooked through.
  4. Meanwhile, cook the gnocchi according to package instructions, then drain.
  5. Add the cooked gnocchi and roasted butternut squash to the skillet with the sausage. Toss to combine.
  6. If desired, add red pepper flakes for extra heat.
  7. Serve hot, topped with grated Parmesan cheese and fresh parsley.

Notes

  • Feel free to substitute the spicy sausage with a milder version if preferred.
  • This dish can be made vegetarian by omitting the sausage and adding more vegetables.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
