- 1 pound gnocchi
- 1 pound spicy sausage, casings removed
- 2 cups butternut squash, diced
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon red pepper flakes (optional)
- 1/4 cup grated Parmesan cheese
- Fresh parsley for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, toss the diced butternut squash with olive oil, salt, and black pepper. Spread on a baking sheet and roast for 25-30 minutes until tender.
- While the squash is roasting, cook the spicy sausage in a large skillet over medium heat until browned and cooked through.
- Meanwhile, cook the gnocchi according to package instructions, then drain.
- Add the cooked gnocchi and roasted butternut squash to the skillet with the sausage. Toss to combine.
- If desired, add red pepper flakes for extra heat.
- Serve hot, topped with grated Parmesan cheese and fresh parsley.
Notes
- Feel free to substitute the spicy sausage with a milder version if preferred.
- This dish can be made vegetarian by omitting the sausage and adding more vegetables.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
