- 100g pancetta or bacon, diced
- 2 large eggs
- 50g grated Parmesan cheese
- 2 tablespoons gochujang
- 2 cloves garlic, minced
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Cook the spaghetti according to package instructions until al dente.
- In a pan, cook the pancetta or bacon over medium heat until crispy.
- Add minced garlic to the pan and sauté for about 1 minute.
- In a bowl, whisk together the eggs, grated Parmesan, gochujang, salt, and pepper.
- Drain the spaghetti and add it to the pan with the pancetta and garlic.
- Remove the pan from heat and quickly mix in the egg mixture, stirring until creamy.
- Serve immediately, garnished with fresh parsley.
Notes
- Adjust the amount of gochujang to your spice preference.
- For a vegetarian version, substitute pancetta with mushrooms.
- Make sure to mix the egg mixture off the heat to prevent scrambling.
