Description

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1/4 cup olive oil
  • Juice of 2 lemons
  • 2 cloves garlic, minced
  • 1 tablespoon dried oregano
  • Salt and pepper to taste
  • 4 pita breads
  • 1 cup cucumbers, diced
  • 1 cup plain Greek yogurt
  • 1 tablespoon fresh dill, chopped
  • 1 cup lettuce, shredded
  • 1 cup tomatoes, diced
  • 1/2 red onion, thinly sliced

Instructions

  1. In a large mixing bowl, whisk together olive oil, lemon juice, garlic, oregano, salt, and pepper to create the marinade.
  2. Add chicken breasts to the marinade, coating them well, and let marinate for at least 30 minutes (or overnight for better flavor).
  3. Prepare the tzatziki by mixing diced cucumbers, Greek yogurt, dill, and a pinch of salt in a separate bowl; refrigerate.
  4. Heat the grill or grill pan over medium-high heat and cook marinated chicken for about 5-7 minutes per side until the internal temperature reaches 165°F (75°C).
  5. Let chicken rest for a few minutes before slicing into strips.
  6. Assemble gyros by placing sliced chicken in each pita, topping with tzatziki, lettuce, tomatoes, and red onion.
