Description

Transform an everyday side dish into a flavorful culinary adventure with these zesty, herb-infused Greek-Style Lemon Potatoes, featuring a crispy exterior and tender interior.

Ingredients

Scale
  • 2 pounds baby potatoes (or Yukon Gold/red potatoes)
  • 1/4 cup olive oil
  • Juice of 2 lemons
  • 4 cloves garlic, minced
  • 2 teaspoons dried oregano
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, whisk together the olive oil, lemon juice, minced garlic, oregano, salt, and pepper until well combined.
  3. Add the potatoes to the bowl and toss gently to ensure they are evenly coated with the zesty mixture.
  4. Spread the potatoes out on a baking sheet in a single layer.
  5. Roast in the preheated oven for 35-45 minutes, tossing halfway through, until golden brown and crispy.
  6. Garnish with fresh parsley before serving warm.

Notes

For even crispier results, soak the potatoes in cold water for about 30 minutes before cooking. You can also prepare the marinade up to 24 hours in advance.
