- 1 pound scallops
- 1 pound firm white fish (such as swordfish or halibut), cut into cubes
- 1 red bell pepper, cut into chunks
- 1 yellow bell pepper, cut into chunks
- 1 zucchini, sliced
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 tablespoon lemon juice
- Salt and pepper to taste
- Wooden or metal skewers
Instructions
- Preheat your grill to medium-high heat.
- In a mixing bowl, whisk together olive oil, minced garlic, lemon juice, salt, and pepper.
- Toss the shrimp, scallops, and fish in the marinade and let sit for 15-30 minutes.
- Thread the marinated seafood and vegetables onto the skewers, alternating between items.
- Grill the skewers for 2-3 minutes on each side until everything is cooked through and tender.
- Serve hot with extra lemon wedges.
