Description

A delicious and satisfying bowl combining seasoned ground beef, sweet roasted potatoes, creamy cottage cheese, and fresh avocado, topped with a drizzle of hot honey for a sweet and spicy kick.


Ingredients

  • 1 lb lean ground beef (93% preferred)
  • 2 medium sweet potatoes, peeled and diced
  • 1 avocado, sliced
  • 1 cup cottage cheese (low-fat or full-fat)
  • 1 yellow onion, diced
  • 2 tbsp olive oil
  • 1 taco seasoning packet (or 2 tbsp homemade)
  • 2 tbsp hot honey
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder
  • 1/4 tsp cinnamon
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Toss the diced sweet potatoes in a mixing bowl with olive oil, paprika, garlic powder, cinnamon, salt, and pepper. Spread them evenly on a baking sheet.
  3. Place the sweet potatoes in the oven and roast for 40–45 minutes, stirring halfway through.
  4. In a medium skillet over medium heat, add the remaining olive oil. Once hot, add the diced onion and cook until softened, about 5 minutes. Add the ground beef and taco seasoning, cooking until browned and fully cooked through, about 8–10 minutes.
  5. Assemble the bowls by layering roasted sweet potatoes, seasoned ground beef, slices of avocado, and a scoop of cottage cheese.
  6. Drizzle hot honey over each bowl before serving.

Notes

For a make-ahead option, roast extra sweet potatoes and store them in the refrigerator for up to four days. You can also prepare the beef in advance for quick assembly.
