A delicious and satisfying bowl combining seasoned ground beef, sweet roasted potatoes, creamy cottage cheese, and fresh avocado, topped with a drizzle of hot honey for a sweet and spicy kick.

- 1 lb lean ground beef (93% preferred)
- 2 medium sweet potatoes, peeled and diced
- 1 avocado, sliced
- 1 cup cottage cheese (low-fat or full-fat)
- 1 yellow onion, diced
- 2 tbsp olive oil
- 1 taco seasoning packet (or 2 tbsp homemade)
- 2 tbsp hot honey
- 1/2 tsp paprika
- 1/2 tsp garlic powder
- 1/4 tsp cinnamon
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Toss the diced sweet potatoes in a mixing bowl with olive oil, paprika, garlic powder, cinnamon, salt, and pepper. Spread them evenly on a baking sheet.
- Place the sweet potatoes in the oven and roast for 40–45 minutes, stirring halfway through.
- In a medium skillet over medium heat, add the remaining olive oil. Once hot, add the diced onion and cook until softened, about 5 minutes. Add the ground beef and taco seasoning, cooking until browned and fully cooked through, about 8–10 minutes.
- Assemble the bowls by layering roasted sweet potatoes, seasoned ground beef, slices of avocado, and a scoop of cottage cheese.
- Drizzle hot honey over each bowl before serving.
Notes
For a make-ahead option, roast extra sweet potatoes and store them in the refrigerator for up to four days. You can also prepare the beef in advance for quick assembly.
