Ingredients

- 2 cups cooked chicken, shredded
- 1 cup pineapple chunks
- 1/2 cup red bell pepper, diced
- 1/2 cup celery, diced
- 1/4 cup green onions, sliced
- 1/2 cup mayonnaise
- 1/4 cup Greek yogurt
- 1 tablespoon lime juice
- Salt and pepper to taste
Instructions
- In a large bowl, combine the shredded chicken, pineapple, red bell pepper, celery, and green onions.
- In a separate bowl, mix together the mayonnaise, Greek yogurt, lime juice, salt, and pepper.
- Pour the dressing over the chicken mixture and toss until well combined.
- Chill in the refrigerator for at least 30 minutes before serving.
- Serve on a bed of lettuce or in a sandwich.
Notes
- For a lighter version, use only Greek yogurt instead of mayonnaise.
