Description

A refreshing and tropical twist on a classic chicken salad, featuring juicy chicken, fresh fruits, and a creamy dressing.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup pineapple chunks
  • 1/2 cup red bell pepper, diced
  • 1/2 cup celery, diced
  • 1/4 cup green onions, sliced
  • 1/2 cup mayonnaise
  • 1/4 cup Greek yogurt
  • 1 tablespoon lime juice
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the shredded chicken, pineapple, red bell pepper, celery, and green onions.
  2. In a separate bowl, mix together the mayonnaise, Greek yogurt, lime juice, salt, and pepper.
  3. Pour the dressing over the chicken mixture and toss until well combined.
  4. Chill in the refrigerator for at least 30 minutes before serving.
