Description

Hawaiian Huli Huli Chicken Stack is a delicious and flavorful dish that combines marinated chicken with fresh vegetables and a tangy sauce, perfect for a summer meal.


Ingredients

  • 4 boneless, skinless chicken thighs
  • 1/2 cup soy sauce
  • 1/4 cup brown sugar
  • 1/4 cup ketchup
  • 1/4 cup pineapple juice
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 tablespoon sesame oil
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 onion, sliced
  • 4 hamburger buns
  • Fresh cilantro for garnish

Instructions

  1. In a bowl, mix soy sauce, brown sugar, ketchup, pineapple juice, garlic, ginger, and sesame oil to create the marinade.
  2. Add chicken thighs to the marinade and let them soak for at least 1 hour, preferably overnight.
  3. Preheat the grill to medium-high heat.
  4. Grill the marinated chicken for about 6-7 minutes on each side or until fully cooked.
  5. While the chicken is grilling, sauté the sliced bell peppers and onion until tender.
  6. Once the chicken is cooked, let it rest for a few minutes before slicing.
  7. Assemble the stack by placing grilled chicken on the bottom bun, topped with sautéed vegetables, and garnish with fresh cilantro.
  8. Serve immediately and enjoy!

Notes

  • For a spicier kick, add sliced jalapeños to the stack.
  • This dish can be served with a side of rice or salad.
