- 2 cups rolled oats
- 1 cup grated apples
- 1/2 cup unsweetened applesauce
- 1/2 cup honey or maple syrup
- 1/4 cup coconut oil, melted
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- 1/2 teaspoon salt
- 1/2 cup chopped walnuts or pecans (optional)
Instructions
- Preheat your oven to 350°F (175°C) and grease your 9×9 inch baking pan.
- In a large mixing bowl, combine the rolled oats, grated apples, applesauce, honey (or maple syrup), melted coconut oil, and vanilla extract until well mixed.
- In another bowl, whisk together the baking powder, cinnamon, and salt. Add this to the wet mixture gradually, stirring gently until just combined.
- Fold in the chopped nuts if using, and pour the batter into the greased baking pan.
- Bake for 25-30 minutes, checking for doneness with a toothpick.
- Allow to cool before slicing and serving.
Notes
This cake can be made ahead and stored in an airtight container. Enjoy with yogurt or a drizzle of honey.
