Description

A wholesome cake featuring the sweetness of grated apples and the heartiness of rolled oats, perfect for breakfast or a guilt-free dessert.


Ingredients

  • 2 cups rolled oats
  • 1 cup grated apples
  • 1/2 cup unsweetened applesauce
  • 1/2 cup honey or maple syrup
  • 1/4 cup coconut oil, melted
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1/2 cup chopped walnuts or pecans (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease your 9×9 inch baking pan.
  2. In a large mixing bowl, combine the rolled oats, grated apples, applesauce, honey (or maple syrup), melted coconut oil, and vanilla extract until well mixed.
  3. In another bowl, whisk together the baking powder, cinnamon, and salt. Add this to the wet mixture gradually, stirring gently until just combined.
  4. Fold in the chopped nuts if using, and pour the batter into the greased baking pan.
  5. Bake for 25-30 minutes, checking for doneness with a toothpick.
  6. Allow to cool before slicing and serving.

Notes

This cake can be made ahead and stored in an airtight container. Enjoy with yogurt or a drizzle of honey.
