- 4 chicken breasts, boneless and skinless
- 1 cup honey BBQ sauce
- 2 pounds potatoes, diced
- 1 cup grated Parmesan cheese
- 4 cloves garlic, minced
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat your grill to medium heat.
- Season the chicken breasts with salt and pepper.
- Brush both sides of the chicken with honey BBQ sauce.
- Grill the chicken for 6-7 minutes on each side until cooked through.
- In a baking dish, toss diced potatoes with olive oil, minced garlic, salt, and pepper.
- Sprinkle grated Parmesan cheese over the potatoes.
- Bake at 400°F (200°C) for 25-30 minutes, stirring halfway through.
- Serve grilled chicken with garlic Parmesan potatoes, garnished with parsley.
Notes
You can marinate the chicken in BBQ sauce the night before for enhanced flavor. If you don’t have a grill, substitute with a stovetop or air fryer.
