Description

A vibrant and refreshing dish featuring tender, marinated chicken stacked with fluffy cilantro rice and creamy avocado.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1/4 cup honey
  • 1/4 cup lime juice
  • Salt and black pepper to taste
  • 1/4 cup chopped cilantro
  • 2 cups cooked rice (white or brown)
  • 1 ripe avocado, diced
  • 1 tablespoon olive oil

Instructions

  1. In a mixing bowl, combine honey, lime juice, salt, and black pepper. Add the chicken breasts, ensuring they are well coated. Cover and marinate for at least 30 minutes.
  2. Heat grill pan or outdoor grill over medium-high heat. Cook the marinated chicken for 6-7 minutes on each side or until it reaches 165°F. Remove from heat and let it rest before slicing.
  3. Prepare the rice according to package instructions. Fluff with a fork and stir in chopped cilantro and a splash of lime juice.
  4. Assemble your stack starting with a scoop of cilantro rice, followed by the sliced chicken and topped with diced avocado.
  5. If desired, drizzle olive oil on top before serving.

Notes
