Description

A vibrant bowl of hot honey chicken served on a bed of brown rice with fresh greens, avocado, and a zesty lime twist.


Ingredients

Scale
  • 2 chicken breasts
  • 1 tablespoon hot honey
  • 1 cup cooked brown rice
  • 1 cup mixed greens
  • 1/2 ripe avocado, sliced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, thinly sliced
  • Salt and pepper to taste
  • Lime wedges for serving

Instructions

  1. Season the chicken breasts with salt and pepper on both sides.
  2. In a preheated skillet over medium heat, cook the chicken for 6-7 minutes per side until golden brown.
  3. Drizzle hot honey over cooked chicken and let bubble for 1-2 minutes.
  4. In a large bowl, layer cooked brown rice and mixed greens.
  5. Top the rice and greens with sliced avocado, halved cherry tomatoes, and thinly sliced red onion.
  6. Slice the hot honey chicken and place it on top.
  7. Serve with lime wedges on the side.
