Keto Crispy Reuben Roll-Ups are a delicious low-carb twist on the classic Reuben sandwich, featuring crispy cheese wraps filled with corned beef, sauerkraut, and creamy dressing.

- 8 oz corned beef, sliced
- 1 cup sauerkraut, drained
- 1/2 cup Swiss cheese, shredded
- 1/4 cup mayonnaise
- 2 tbsp Dijon mustard
- 1 tsp garlic powder
- 1 tsp onion powder
- 4 oz shredded mozzarella cheese
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, mix mayonnaise, Dijon mustard, garlic powder, and onion powder.
- On a baking sheet lined with parchment paper, spread shredded mozzarella cheese into thin circles.
- Bake for 5-7 minutes until the cheese is melted and slightly golden.
- Remove from the oven and let cool slightly.
- Spread the mayonnaise mixture on each cheese circle.
- Add corned beef and sauerkraut on top of the spread.
- Roll up each cheese circle tightly and secure with a toothpick if necessary.
- Return to the oven for an additional 5 minutes to crisp up the roll-ups.
- Serve warm and enjoy!
Notes
- Make sure to drain the sauerkraut well to avoid sogginess.
- Feel free to add more cheese for extra flavor.
- These roll-ups can be made ahead of time and reheated before serving.
