Description

Keto Crispy Reuben Roll-Ups are a delicious low-carb twist on the classic Reuben sandwich, featuring crispy cheese wraps filled with corned beef, sauerkraut, and creamy dressing.


Ingredients

  • 8 oz corned beef, sliced
  • 1 cup sauerkraut, drained
  • 1/2 cup Swiss cheese, shredded
  • 1/4 cup mayonnaise
  • 2 tbsp Dijon mustard
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 4 oz shredded mozzarella cheese

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mix mayonnaise, Dijon mustard, garlic powder, and onion powder.
  3. On a baking sheet lined with parchment paper, spread shredded mozzarella cheese into thin circles.
  4. Bake for 5-7 minutes until the cheese is melted and slightly golden.
  5. Remove from the oven and let cool slightly.
  6. Spread the mayonnaise mixture on each cheese circle.
  7. Add corned beef and sauerkraut on top of the spread.
  8. Roll up each cheese circle tightly and secure with a toothpick if necessary.
  9. Return to the oven for an additional 5 minutes to crisp up the roll-ups.
  10. Serve warm and enjoy!
