- 1 cup rolled oats
- 1 cup all-purpose flour
- 1/2 cup brown sugar
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 2 large eggs
- 1/4 cup fresh lemon juice
- Zest of 1 lemon
- 1/2 teaspoon baking powder
Instructions
- Preheat your oven to 350°F (175°C). Grease an 8×8-inch baking dish.
- In a mixing bowl, combine the rolled oats, all-purpose flour, brown sugar, and salt; stir until well blended.
- Cut in the softened butter until the mixture resembles coarse crumbs.
- Press half of the crumb mixture into the bottom of the prepared baking dish to form the crust.
- In another bowl, beat the granulated sugar and eggs until smooth; stir in the fresh lemon juice and zest.
- Pour the lemon mixture over the crust in the baking dish.
- Crumble the remaining oat mixture over the lemon layer.
- Bake for 25-30 minutes or until the top is golden and the filling is set.
- Let cool completely before cutting into squares.
Notes
For a gluten-free option, substitute all-purpose flour with gluten-free flour. Store in an airtight container for up to a week.
