- 6 cups Rice Krispies cereal
- 3 tablespoons unsalted butter
- 3 cups mini marshmallows (half yellow lemon-flavored)
- Zest of 1 lemon
- 1/2 teaspoon lemon extract (optional)
- 1/2 cup white chocolate chips or melting wafers
- Lemon peel or zest, for garnish
Instructions
- Prepare the Pan: Grease a 9×9-inch baking pan or line it with parchment paper.
- Melt the Butter: In a large saucepan, melt the unsalted butter over low heat.
- Add the Marshmallows: Stir in the mini marshmallows until fully melted and smooth.
- Infuse the Lemon: Remove from heat and stir in the lemon zest and lemon extract.
- Combine with Rice Krispies: Gently fold in the Rice Krispies until coated.
- Shape the Treats: Press the mixture into the prepared pan using a buttered spatula.
- Melt the White Chocolate: Melt white chocolate chips in a microwave-safe bowl in short intervals and stir until smooth.
- Drizzle and Garnish: Drizzle the melted white chocolate over the treats and sprinkle with lemon zest.
- Set and Enjoy: Allow to cool for at least 30 minutes, then cut into squares and enjoy.
