Description

Delicious and vibrant Lemon Rice Krispy Treats, featuring a zesty lemon flavor combined with sweet marshmallows and a crunchy texture.


Ingredients

  • 6 cups Rice Krispies cereal
  • 3 tablespoons unsalted butter
  • 3 cups mini marshmallows (half yellow lemon-flavored)
  • Zest of 1 lemon
  • 1/2 teaspoon lemon extract (optional)
  • 1/2 cup white chocolate chips or melting wafers
  • Lemon peel or zest, for garnish

Instructions

  1. Prepare the Pan: Grease a 9×9-inch baking pan or line it with parchment paper.
  2. Melt the Butter: In a large saucepan, melt the unsalted butter over low heat.
  3. Add the Marshmallows: Stir in the mini marshmallows until fully melted and smooth.
  4. Infuse the Lemon: Remove from heat and stir in the lemon zest and lemon extract.
  5. Combine with Rice Krispies: Gently fold in the Rice Krispies until coated.
  6. Shape the Treats: Press the mixture into the prepared pan using a buttered spatula.
  7. Melt the White Chocolate: Melt white chocolate chips in a microwave-safe bowl in short intervals and stir until smooth.
  8. Drizzle and Garnish: Drizzle the melted white chocolate over the treats and sprinkle with lemon zest.
  9. Set and Enjoy: Allow to cool for at least 30 minutes, then cut into squares and enjoy.
