- 1 lb sirloin steak
- 3 tbsp olive oil
- 2 garlic cloves, minced
- 1 tbsp lemon juice
- 2 cups cooked grains (brown rice or quinoa)
- Cherry tomatoes, halved
- Cucumber, diced
- Red onion, sliced
- Kalamata olives, pitted and halved
- Tzatziki sauce
Instructions
- Marinate the steak by combining olive oil, minced garlic, lemon juice, oregano, thyme, salt, and pepper in a bowl. Coat the steak thoroughly and let it marinate for at least 30 minutes.
- Prepare the tzatziki by mixing Greek yogurt, grated cucumber, lemon juice, minced garlic, dill, salt, and pepper in a bowl. Refrigerate to allow flavors to meld.
- Heat a skillet over medium-high heat and add olive oil. Sear the marinated steak for 4–5 minutes on each side. Let it rest for 5 minutes before slicing.
- Assemble the bowl starting with cooked grains, adding sliced steak, cherry tomatoes, cucumber, red onion, and kalamata olives. Drizzle with tzatziki sauce before serving.
