- 4 ears of corn, husked
- ½ cup mayonnaise
- 1 lime, juiced
- ½ cup cotija cheese, crumbled
- 1 teaspoon chili powder
- Fresh cilantro, chopped (for garnish)
- Salt and pepper to taste
Instructions
- Preheat the grill to medium-high heat.
- Grill the corn for about 10 minutes, turning occasionally until charred and tender.
- In a bowl, mix together the mayonnaise and lime juice until smooth.
- Carefully coat each ear of corn with the mayo-lime mixture.
- Sprinkle with cotija cheese, chili powder, cilantro, and add salt and pepper to taste.
- Serve immediately while warm.
