Ingredients

- 200g Lotus biscuits
- 100g unsalted butter, melted
- 400g cream cheese
- 200g powdered sugar
- 300ml heavy cream
- 1 tsp vanilla extract
- Lotus biscuit crumbs for topping
Instructions
- Crush the Lotus biscuits into fine crumbs.
- Mix the crushed biscuits with melted butter until well combined.
- Press the mixture into the bottom of a springform pan to form the crust.
- In a bowl, beat the cream cheese and powdered sugar until smooth.
- In another bowl, whip the heavy cream and vanilla extract until stiff peaks form.
- Gently fold the whipped cream into the cream cheese mixture.
- Pour the cheesecake filling over the crust and smooth the top.
- Refrigerate for at least 4 hours or until set.
- Before serving, sprinkle with Lotus biscuit crumbs on top.
Notes
- For a firmer cheesecake, refrigerate overnight.
- Can be topped with caramel or chocolate sauce for extra flavor.
