- 1 cup dates, pitted and chopped
- 1/2 cup almond flour
- 1/4 cup maple syrup
- 1 teaspoon vanilla extract

Instructions
- In a food processor, combine the chopped pecans, dates, almond flour, maple syrup, vanilla extract, and salt.
- Process until the mixture is well combined and sticky.
- Using your hands, form the mixture into small balls, about 1 inch in diameter.
- Place the balls on a parchment-lined baking sheet.
- Refrigerate for at least 30 minutes to firm up.
- Serve chilled or at room temperature.
Notes
- Store in an airtight container in the refrigerator for up to a week.
- For added flavor, roll the balls in shredded coconut or cocoa powder before refrigerating.
