- 2 chicken breasts, cubed
- 1 cup pineapple chunks
- 1 cup rice
- 1/2 cup bell peppers, chopped
- 1/2 cup onion, chopped
- 2 cloves garlic, minced
- 2 tablespoons soy sauce
- 1 tablespoon olive oil
- Salt and pepper to taste
- Green onions for garnish (optional)
Instructions
- In a medium pot, cook the rice according to package instructions.
- In a heavy-bottomed skillet, heat olive oil over medium heat.
- Add chopped onions and minced garlic, followed by bell peppers. Cook for about 3-5 minutes.
- Add the cubed chicken, season with salt and pepper, and brown for about 6-7 minutes.
- Stir in the pineapple chunks and soy sauce, simmer for an additional 3-4 minutes.
- Fluff the cooked rice with a fork and serve it topped with the chicken and pineapple mixture, garnished with green onions if desired.
Notes
You can prepare the chicken and vegetable mixture a day in advance. Adjust cooking times if using an air fryer or oven for the chicken.
