Description

A delightful dish combining sweet pineapple, tender chicken, and fluffy rice, perfect for a tropical getaway experience.


Ingredients

  • 2 chicken breasts, cubed
  • 1 cup pineapple chunks
  • 1 cup rice
  • 1/2 cup bell peppers, chopped
  • 1/2 cup onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Green onions for garnish (optional)

Instructions

  1. In a medium pot, cook the rice according to package instructions.
  2. In a heavy-bottomed skillet, heat olive oil over medium heat.
  3. Add chopped onions and minced garlic, followed by bell peppers. Cook for about 3-5 minutes.
  4. Add the cubed chicken, season with salt and pepper, and brown for about 6-7 minutes.
  5. Stir in the pineapple chunks and soy sauce, simmer for an additional 3-4 minutes.
  6. Fluff the cooked rice with a fork and serve it topped with the chicken and pineapple mixture, garnished with green onions if desired.

Notes

You can prepare the chicken and vegetable mixture a day in advance. Adjust cooking times if using an air fryer or oven for the chicken.
