- 1 rack of lamb (8 ribs)
- 1 cup pistachios, finely chopped
- 2 tablespoons Dijon mustard
- 2 tablespoons olive oil
- Salt to taste
- Pepper to taste

Instructions
- Preheat your oven to 400°F (200°C).
- Generously season the rack of lamb with salt and pepper.
- In a small mixing bowl, whisk together the Dijon mustard and olive oil.
- Brush the lamb rack with the mustard mixture.
- Press the chopped pistachios onto the mustard-coated surface of the lamb.
- Place the rack of lamb on a roasting pan and roast for 20-25 minutes, until the internal temperature reaches 125°F for medium-rare.
- Remove from the oven and let it rest for 5-10 minutes.
- Slice between the ribs to serve, garnishing with fresh herbs.
