Description

A stunning recipe featuring succulent lamb coated in a crunchy pistachio crust, perfect for any special occasion.


Ingredients

  • 1 rack of lamb (8 ribs)
  • 1 cup pistachios, finely chopped
  • 2 tablespoons Dijon mustard
  • 2 tablespoons olive oil
  • Salt to taste
  • Pepper to taste
  • Fresh herbs (such as thyme or rosemary), for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Generously season the rack of lamb with salt and pepper.
  3. In a small mixing bowl, whisk together the Dijon mustard and olive oil.
  4. Brush the lamb rack with the mustard mixture.
  5. Press the chopped pistachios onto the mustard-coated surface of the lamb.
  6. Place the rack of lamb on a roasting pan and roast for 20-25 minutes, until the internal temperature reaches 125°F for medium-rare.
  7. Remove from the oven and let it rest for 5-10 minutes.
  8. Slice between the ribs to serve, garnishing with fresh herbs.
