Description

Ingredients

  • 1 cup mushrooms, sliced
  • 1 medium onion, sliced
  • 2 tablespoons olive oil

  • 1 teaspoon garlic powder (optional)
  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions

  1. Heat the olive oil in a large skillet over medium heat until shimmering.
  2. Add the sliced onions and sauté for 2-3 minutes until they soften.
  3. Introduce the sliced mushrooms and cook for another 3-4 minutes until tender.
  4. Add the zucchini and sauté for 5-7 minutes, stirring occasionally.
  5. Season with salt, pepper, and garlic powder if desired.
  6. Remove from heat and garnish with fresh parsley before serving.

Notes

This dish can be prepared in advance and stored in the fridge for up to three days. For added crunch, try roasting or air frying the vegetables.
