- 1 lb shrimp, peeled and deveined
- 2 ripe avocados
- 1 mango, diced
- 1 lime, juiced
- 2 tablespoons chili sauce
- 1/4 cup fresh cilantro, chopped
- 1/4 red onion, finely sliced
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- Heat a non-stick skillet over medium heat with a drizzle of oil. Add the shrimp, season with salt and pepper, and sauté for 2-3 minutes until they turn pink and opaque.
- While the shrimp cook, dice the avocado and mango into bite-sized pieces, and chop the cilantro and red onion.
- In a mixing bowl, gently fold together the mango, avocado, cilantro, red onion, lime juice, salt, and pepper to make the salsa.
- In another bowl, combine lime juice with chili sauce and stir until well blended.
- Assemble the bowls starting with a scoop of shrimp and top with mango salsa, then drizzle with lime-chili sauce.
- Serve immediately and enjoy!
Notes
For best flavor, prepare the mango salsa and lime-chili sauce a few hours ahead. Customize by adding feta cheese or substitutes for the shrimp.
