Description

A vibrant and refreshing bowl combining sautéed shrimp, creamy avocado, and sweet mango salsa, drizzled with a zesty lime-chili sauce. Perfect for summer gatherings!


Ingredients

  • 1 lb shrimp, peeled and deveined
  • 2 ripe avocados
  • 1 mango, diced
  • 1 lime, juiced
  • 2 tablespoons chili sauce
  • 1/4 cup fresh cilantro, chopped
  • 1/4 red onion, finely sliced
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Heat a non-stick skillet over medium heat with a drizzle of oil. Add the shrimp, season with salt and pepper, and sauté for 2-3 minutes until they turn pink and opaque.
  2. While the shrimp cook, dice the avocado and mango into bite-sized pieces, and chop the cilantro and red onion.
  3. In a mixing bowl, gently fold together the mango, avocado, cilantro, red onion, lime juice, salt, and pepper to make the salsa.
  4. In another bowl, combine lime juice with chili sauce and stir until well blended.
  5. Assemble the bowls starting with a scoop of shrimp and top with mango salsa, then drizzle with lime-chili sauce.
  6. Serve immediately and enjoy!

Notes

For best flavor, prepare the mango salsa and lime-chili sauce a few hours ahead. Customize by adding feta cheese or substitutes for the shrimp.
