- 2 tablespoons olive oil
- 1 medium yellow onion, diced
- 2 cloves garlic, minced
- 1 medium red bell pepper, diced
- 2 medium sweet potatoes, peeled and diced (about 3 cups)
- 2 cans (15 oz each) black beans, drained and rinsed
- 4 cups vegetable broth
- 1 can (14.5 oz) diced tomatoes with juices
- 1 teaspoon smoked paprika
- 1 teaspoon ground cumin
- 0.5 teaspoon chili powder
- 0.5 teaspoon dried oregano
- 0.25 teaspoon cayenne pepper, optional for heat
- 1 teaspoon salt, or to taste
- 0.5 teaspoon freshly ground black pepper
- 0.5 cup sour cream or Greek yogurt
- Zest of 1 lime
- 1 tablespoon fresh lime juice
- Pinch of salt
- Chopped fresh cilantro
- Sliced jalapeños
- Lime wedges
Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the diced onion and sauté until translucent, about 4 minutes. Then add minced garlic and diced bell pepper, cooking for 2 more minutes.
- Stir in the diced sweet potatoes along with smoked paprika, ground cumin, chili powder, dried oregano, cayenne pepper (if using), salt, and black pepper. Cook for 2 minutes.
- Add the drained black beans, diced tomatoes with juices, and vegetable broth. Bring to a boil and then reduce to a simmer.
- Cover and let simmer for 20 to 25 minutes, or until sweet potatoes are tender.
- Use an immersion blender to partially puree the soup, or transfer some to a regular blender and blend until smooth before returning to the pot.
- In a small bowl, whisk together sour cream or Greek yogurt, lime zest, lime juice, and a pinch of salt.
- Taste the soup and adjust seasoning as needed. Serve in bowls topped with lime crema, cilantro, sliced jalapeños, and lime wedges.
Notes
