Description

Tender and juicy Greek meatballs bathed in a refreshing lemon sauce, perfect for any occasion.


Ingredients

  • 1 lb ground beef
  • 1 small onion (finely grated)
  • 1/4 cup arborio rice (uncooked)
  • 2 tablespoons fresh parsley (chopped)
  • 1 tablespoon fresh dill (chopped)
  • 1 egg
  • Salt and black pepper to taste
  • 1/2 teaspoon dried oregano
  • 4 cups chicken broth
  • 2 tablespoons olive oil
  • 2 eggs (for lemon sauce)
  • Juice of 2 lemons (about 1/4 cup)
  • Salt and pepper to taste (for sauce)

Instructions

  1. In a large mixing bowl, gently mix together the ground beef, finely grated onion, uncooked rice, fresh parsley, dill, egg, salt, black pepper, and oregano.
  2. Scoop out portions of the mixture and shape them into golf-ball-sized meatballs. Chill in the fridge for 15-20 minutes.
  3. Heat chicken broth and olive oil in a wide pot over medium heat. Add the chilled meatballs and cook on low heat for 30 minutes.
  4. In a bowl, whisk together the eggs and lemon juice. Gradually temper this mixture with hot broth.
  5. Pour the tempered mixture back into the pot and stir gently over low heat until the sauce thickens.
  6. Serve the meatballs warm, garnished with fresh dill or lemon wedges.

Notes

For added flavor, consider using ground turkey instead of beef or adding feta cheese to the mixture.
