Tender and juicy Greek meatballs bathed in a refreshing lemon sauce, perfect for any occasion.
Ingredients

- 1 lb ground beef
- 1 small onion (finely grated)
- 1/4 cup arborio rice (uncooked)
- 2 tablespoons fresh parsley (chopped)
- 1 tablespoon fresh dill (chopped)
- 1 egg
- Salt and black pepper to taste
- 1/2 teaspoon dried oregano
- 4 cups chicken broth
- 2 tablespoons olive oil
- 2 eggs (for lemon sauce)
- Juice of 2 lemons (about 1/4 cup)
- Salt and pepper to taste (for sauce)
Instructions
- In a large mixing bowl, gently mix together the ground beef, finely grated onion, uncooked rice, fresh parsley, dill, egg, salt, black pepper, and oregano.
- Scoop out portions of the mixture and shape them into golf-ball-sized meatballs. Chill in the fridge for 15-20 minutes.
- Heat chicken broth and olive oil in a wide pot over medium heat. Add the chilled meatballs and cook on low heat for 30 minutes.
- In a bowl, whisk together the eggs and lemon juice. Gradually temper this mixture with hot broth.
- Pour the tempered mixture back into the pot and stir gently over low heat until the sauce thickens.
- Serve the meatballs warm, garnished with fresh dill or lemon wedges.
Notes
For added flavor, consider using ground turkey instead of beef or adding feta cheese to the mixture.
