- 2 pounds pork loin
- 1 cup dried apricots, chopped
- 1 cup breadcrumbs
- 1/2 cup onion, finely chopped
- 2 cloves garlic, minced
- 1/4 cup fresh parsley, chopped
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon thyme
- 1/2 cup chicken broth
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, mix the chopped apricots, breadcrumbs, onion, garlic, parsley, salt, pepper, and thyme.
- Cut a pocket in the pork loin and stuff it with the apricot mixture.
- Secure the opening with kitchen twine or toothpicks.
- Place the stuffed pork loin in a baking dish and pour chicken broth over it.
- Bake for 1 hour or until the internal temperature reaches 145°F (63°C).
- Let it rest for 10 minutes before slicing and serving.
