Description

A delicious and flavorful stuffed pork loin recipe featuring apricots for a sweet and savory combination.


Ingredients

  • 2 pounds pork loin
  • 1 cup dried apricots, chopped
  • 1 cup breadcrumbs
  • 1/2 cup onion, finely chopped
  • 2 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon thyme
  • 1/2 cup chicken broth

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix the chopped apricots, breadcrumbs, onion, garlic, parsley, salt, pepper, and thyme.
  3. Cut a pocket in the pork loin and stuff it with the apricot mixture.
  4. Secure the opening with kitchen twine or toothpicks.
  5. Place the stuffed pork loin in a baking dish and pour chicken broth over it.
  6. Bake for 1 hour or until the internal temperature reaches 145°F (63°C).
  7. Let it rest for 10 minutes before slicing and serving.

Notes

  • For added flavor, marinate the pork loin overnight.
