- 1 cup uncooked white rice
- 2 cups water
- 1 lb ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 packet taco seasoning
- 1 cup canned black beans, drained and rinsed
- 1 cup shredded lettuce
- 1 cup chopped tomatoes
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1/4 cup chopped green onions
- 1/4 cup sliced black olives
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Cook the Rice: Bring 2 cups of water to a boil in a medium saucepan. Add rice, stir, reduce heat to low, cover, and simmer for about 15 minutes.
- Sauté the Aromatics: Heat olive oil in a large skillet over medium heat. Add diced onion and minced garlic, cooking until translucent (3-4 minutes).
- Brown the Beef: Add ground beef to the skillet and cook thoroughly, breaking apart until browned.
- Season: Stir in taco seasoning and 1/4 cup of water, simmer for 5 minutes.
- Incorporate the Beans: Add black beans to the mixture, simmering for 2-3 minutes.
- Assemble the Taco Rice: On serving plates, layer cooked rice, beef and bean mixture, lettuce, tomatoes, and cheddar cheese.
- Finish with Toppings: Top with sour cream, green onions, and olives to serve.
