Description

A hearty and flavorful dish combining seasoned beef, fluffy rice, black beans, and fresh toppings for a satisfying meal.


Ingredients

  • 1 cup uncooked white rice
  • 2 cups water
  • 1 lb ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 packet taco seasoning
  • 1 cup canned black beans, drained and rinsed
  • 1 cup shredded lettuce
  • 1 cup chopped tomatoes
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup chopped green onions
  • 1/4 cup sliced black olives
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Cook the Rice: Bring 2 cups of water to a boil in a medium saucepan. Add rice, stir, reduce heat to low, cover, and simmer for about 15 minutes.
  2. Sauté the Aromatics: Heat olive oil in a large skillet over medium heat. Add diced onion and minced garlic, cooking until translucent (3-4 minutes).
  3. Brown the Beef: Add ground beef to the skillet and cook thoroughly, breaking apart until browned.
  4. Season: Stir in taco seasoning and 1/4 cup of water, simmer for 5 minutes.
  5. Incorporate the Beans: Add black beans to the mixture, simmering for 2-3 minutes.
  6. Assemble the Taco Rice: On serving plates, layer cooked rice, beef and bean mixture, lettuce, tomatoes, and cheddar cheese.
  7. Finish with Toppings: Top with sour cream, green onions, and olives to serve.

Notes

Customize toppings based on personal preference. Can be made vegetarian or with different types of meat.
