Ingredients

- 1 sheet of puff pastry
- 500g mushrooms, finely chopped
- 1 onion, diced
- 2 cloves garlic, minced
- 1 cup spinach, chopped
- 1/2 cup breadcrumbs
- 1/4 cup walnuts, chopped
- 1 tsp thyme
- 1 tsp rosemary
- Salt and pepper to taste
- 1 egg (for egg wash)
Instructions
- Preheat the oven to 200°C (400°F).
- In a pan, sauté the onion and garlic until translucent.
- Add the chopped mushrooms and cook until the moisture evaporates.
- Stir in the spinach, breadcrumbs, walnuts, thyme, rosemary, salt, and pepper.
- Roll out the puff pastry and place the mushroom mixture in the center.
- Fold the pastry over the filling and seal the edges.
- Brush the top with egg wash.
- Bake for 25-30 minutes or until golden brown.
Notes
- Serve with a side salad for a complete meal.
- Can be made ahead and frozen before baking.
- Feel free to add other vegetables or spices to the filling.
