Description

A comforting and hearty winter bake featuring white chicken chili and cottage cheese, perfect for chilly days.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 can (15 oz) white beans, drained and rinsed
  • 1 can (4 oz) diced green chilies
  • 1 cup chicken broth
  • 1 cup cottage cheese
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, combine the shredded chicken, white beans, green chilies, chicken broth, cottage cheese, and half of the shredded cheese.
  3. Add cumin, garlic powder, onion powder, salt, and pepper to the mixture and stir until well combined.
  4. Transfer the mixture to a greased baking dish.
  5. Top with the remaining shredded cheese.
  6. Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden.
  7. Let it cool for a few minutes before serving.
