- 2 cups cooked chicken, shredded
- 1 can (15 oz) white beans, drained and rinsed
- 1 can (4 oz) diced green chilies
- 1 cup chicken broth
- 1 cup cottage cheese
- 1 cup shredded cheese (cheddar or Monterey Jack)
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 1 tablespoon olive oil
Instructions
- Preheat the oven to 350°F (175°C).
- In a large mixing bowl, combine the shredded chicken, white beans, green chilies, chicken broth, cottage cheese, and half of the shredded cheese.
- Add cumin, garlic powder, onion powder, salt, and pepper to the mixture and stir until well combined.
- Transfer the mixture to a greased baking dish.
- Top with the remaining shredded cheese.
- Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden.
- Let it cool for a few minutes before serving.
Notes
- Feel free to add more spices for extra flavor.
- This dish can be made ahead of time and stored in the refrigerator.
- Serve with tortilla chips or crusty bread for a complete meal.
