- 1 lb smoked sausage, sliced
- 1 lb chicken breast, diced
- 1 cup bell peppers, chopped
- 1 cup onion, chopped
- 2 cups long-grain rice
- 4 cups chicken broth
- 1 can diced tomatoes (14.5 oz)
- 2 tsp Cajun seasoning
- 1 tsp garlic powder
- Salt and pepper to taste
Instructions
- In a large pot, brown the smoked sausage over medium heat.
- Add the diced chicken and cook until no longer pink.
- Stir in the chopped bell peppers and onion, cooking until softened.
- Add the rice, chicken broth, diced tomatoes, Cajun seasoning, garlic powder, salt, and pepper.
- Bring to a boil, then reduce heat to low and cover.
- Simmer for 20-25 minutes, or until the rice is cooked and liquid is absorbed.
- Fluff with a fork and serve hot.
Notes
- Feel free to add shrimp or other seafood for extra flavor.
- Adjust the spice level by adding more or less Cajun seasoning.
- This dish can be made ahead of time and reheated for easy meals.
