- 2 pounds chicken breasts (boneless, skinless)
- 1 can black beans (drained and rinsed)
- 1 can corn
- 1 can diced tomatoes with green chilies
- 1 packet taco seasoning
- 1 cup chicken broth
- 1 cup cooked rice
- 1 cup shredded cheese (optional)
- Chopped cilantro for garnish (optional)
Instructions
- Layer your chicken by placing the chicken breasts at the bottom of your slow cooker.
- Add the drained black beans, sweet corn, and diced tomatoes including their juices.
- Sprinkle the taco seasoning evenly across the top.
- Pour the chicken broth over everything and give a gentle stir to combine.
- Set the crock pot on low heat for 6-8 hours or high for 3-4 hours.
- Shred the chicken using two forks once it’s cooked through.
- Stir in the prepared rice and fold in the shredded cheese if desired.
- Garnish with fresh cilantro before serving hot.
Notes
For make-ahead, layer ingredients in the crock pot the night before and cook in the morning. Adjust for vegetarian by substituting chicken and using vegetable broth.
