- 4 cups hash browns
- 8 slices bacon, cooked and crumbled
- 6 large eggs
- 1 cup shredded cheddar cheese
- 1/2 cup milk
- Salt to taste
- Pepper to taste
- 1/2 onion, chopped (optional)
- 1 bell pepper, chopped (optional)
Instructions
- Preheat the oven to 350°F (175°C).
- Cook the bacon until crispy. Remove and crumble.
- Sauté onion and bell pepper in the same skillet until softened.
- Combine hash browns, bacon, sautéed vegetables, eggs, milk, salt, and pepper in a large bowl.
- Pour the mixture into a greased baking dish and top with cheese.
- Bake for 45-50 minutes until eggs are set and top is golden brown.
- Cool slightly before serving.
Notes
Assemble the casserole the night before for an easy prep in the morning. Customize with additional vegetables or spices.
